{"id":61091,"date":"2025-05-03T13:15:26","date_gmt":"2025-05-03T13:15:26","guid":{"rendered":"https:\/\/lecoursdelavie.com\/?p=61091"},"modified":"2025-05-03T13:15:28","modified_gmt":"2025-05-03T13:15:28","slug":"veau-aux-olives","status":"publish","type":"post","link":"https:\/\/lecoursdelavie.com\/?p=61091","title":{"rendered":"Veau aux olives."},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Aux deux olives, devrais-je dire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aujourd&rsquo;hui c&rsquo;\u00e9tait du paleron de veau mais vous pouvez choisir du jarret ou du collier, c&rsquo;est meilleur encore.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le veau cuit assez vite, c&rsquo;est un avantage, le mieux est de le cuisiner la veille, le r\u00e9chauffer le lendemain en faisant r\u00e9duire la sauce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Faire revenir la viande dans de l&rsquo;huile d&rsquo;olive, ajouter une cuill\u00e8re \u00e0 soupe de farine \u00e0 peine rase, cela \u00e9vitera d&rsquo;avoir une sauce trop liquide.<br>J&rsquo;ai choisi des carottes assez grosses, des \u00e9chalotes enti\u00e8res, des champignons frais, des olives vertes \u00e0 la proven\u00e7ale et des olives noires \u00e0 la grecque avec des herbes. <br>J&rsquo;ai balanc\u00e9 de l&rsquo;ail, du c\u00e9leri frais.<br>Vous pouvez mettre ce que vous voulez, des panais de saison, des petits navet nouveaux, des petits pois frais&#8230;
